The story of Noah (in the Bible) is so infuriating...

You have nothing. Your argument is nothing. You have literally zero going for your claim except an old book and hearsay. Just admit it; your lot lost this argument a very long time ago. It doesn't mean there is no God, it doesn't prove the universe wasn't created exclusively for mankind to enjoy (there's a whole mountain of other stuff for those topics), but on this particular point, you are wrong. Just as the Catholic Church was wrong about the Sun going around the Earth, which they graciously admitted in the 90's(!), you are wrong about this.
It's ok to be wrong, it really is! Nobody blames you. But to blindly refuse to acknowledge the sheer immensity of the still-growing pile of evidence and facts...people have less sympathy for that. Ignorance is forgivable. Willful ignorance, less so.

Evolution happens, all the time. That is not just a theory anymore, it is a law as well-founded and concrete as the universal law of gravitation. DNA replicates imperfectly, causing slight mutations. These mutations may be passed onto the next generation, if the carrier of the mutation survives the environmental factors that it is tested against. This process repeats itself, over and over again, and slowly you get increasing genetic diversity, until eventually whole other species emerge, all branches from a single tree. All because of DNA that can never copy itself with 100% accuracy.
That's all. That's all it is. Why can you not accept that? Please, honestly tell me.
Why?

And by and large, for multi-celled organisms like dogs or humans, 'thousands of years' is nothing in terms of evolution. There are slight, mostly cosmetic changes, but nothing that creates so much of a split that interbreeding is no longer possible.
There are exceptions for things like the ring species mentioned above, but you generally need timescales of hundreds of thousands to millions of years for the critical changes to come about.
I'm pretty much pleading with you now; please read about this kind of stuff. Not only is it a fascinating subject, it will make things a lot clearer, if you only open your mind and let in a different point of view in.
