It is the evidence, afterall the first book to mention the Big Bang was the Quran.
The only field in which the Quran would be evidence would be something like archaeology, where the scope of inquiry is the text itself, and the questions would be more along the lines of how far did Islam penetrate into the Philippines or somesuch.
Evidence of the origin of the universe is found in such things as the Cosmic Microwave Background radiation, or the ratio of helium to hydrogen in distant galaxies.
Whatever you imagine the Quran says about cosmology, it remains a claim, simply because the Quran is traced to the 7th Century whereas the CMB goes back to 370,000 years after the universe was at maximum density.
