Just finished some leftover pork stew with dumplings I made Wednesday night.
Because I live alone and work fifty hours a week, I too cook plenty (on my days off, only one this week, 60+ hours, yay) with leftovers in mind so that I can eat home-cooking throughout the week -- this stew is a result of that approach.
I'll have to do some cooking in the next day or two, probably will do homemade pizza or perhaps some Mexican food.
