Well, I don't work off of recipes, so each batch is a little different. This one, I boiled the meat off a couple of leg-quarters, with three cubes of bullion in the water -- which was about 3¾ quarts, which I saved as my base. I pulled the meat off the bones, shredding it as I went. Into the broth went about 1/4 cup of bell pepper chopped fine, half-a-pound of tomatoes, 3/4 pound of sliced carrots, 3 cloves of garlic minced, and six large white mushrooms, cubed. Raised the base back to boiling for about ten minutes, added the chicken back in along with a cup of rice. I seasoned it with ground black pepper, a little seasoning salt, some garlic powder, poultry seasoning, and a touch of basil. Reduced it to a simmer and let it work for thirty minutes.
It came out fine, served with garlic toast on the side.
Can you tell I love garlic?
