Just finished putting together another batch of fig chutney. Just cooking it down now, about twenty more minutes.
The first batch was way too sweet. Cut the sugar down by more than half and switched from dark brown to coconut sugar. Pretty sure the ripe figs and fuji apple will give it plenty of sweetness. Increased the fresh ginger a bit, doubled the orange rind, left the rind on the apple this time and doubled the amount of red onion. Left in just one jalepeno but cut it coarser this time. Oh and I cut down from three to two cinnamon sticks.
Last batch was good but too sweet. Can't wait for it to cool off and see.
