When it’s nighttime in one hemisphere, it’s daytime in the other. This is caused by the Earth’s rotation. The sun is still there, we’ve simply turned away from it. It’s as if you’re looking at your cat sleeping on the bed. If you look away, the cat is still on the bed - it’s still there.
This is where your interpretation of the Quranic verse you quoted is flawed. ‘Night’ is a purely local and transient phenomenon, it’s got nothing at all to do with space as a whole. In fact, at any given moment, it’s ‘night’ in trillions of places in the universe and ‘day’ in trillions of others.
