Simple and Cheap Winter Recipes

Hey all, I was thinking about simple winter foods that wouldn’t break the bank the other day and I’d thought I’d share one of mine to get the ball rolling and see what people like to eat when it gets cold outside.
Quid’s Cheap Ass Minestrone Soup
6 Cups Beef Broth plus 2 cups water
1 lb Cube Steak cut into ⅓ in cubes (Not the tenderest cut of meat but super cheap and super flavorful, and the simmering tenderizes it.)
1 14.5 oz can of Mixed Vegetable medley, drained (the one I use includes peas, carrots, green beans and potatoes)
1 14.5 oz can of Dark Red Kidney Beans, drained
3 Tbs of Tomato Paste
1 medium Onion, chopped
2 cloves Garlic, chopped fine
1 cup small Dried pasta shapes
1 Tbs Italian seasoning
2 Tbs Butter
1 pinch crushed red pepper flakes
Salt and pepper to taste
1. Add onions and butter to large soup pot, and sweat over medium-high heat until the onions soften. Add Beef and Garlic, and cook until meat is browned.
2. Add stock, water, and tomato paste. Whisk or stir until the paste is well combined. Add vegetables, beans, Red Pepper Flakes, and Italian Seasoning. Bring to boil.
3. Once at boil, reduce heat and add pasta. Simmer for 1 hour, or until pasta is cooked and a layer of fat has risen to the surface. Season with salt and pepper to taste.
4. Ladle into bowls and serve with a nice bread or shavings of Parmesan cheese.

Rice porridge, a traditional Finnish Christmas dish and cheap as hell
Four servings:
2dl porridge rice (it's a short, sticky sort of rice)
2dl water
1l fat milk (you can use non-fat also, be be prepared to stir like crazy!)
a pinch of salt
1. Boil the water and let the rice bloat a bit.
2. Add the milk and salt.
3. Let it simmer gently and stir every now and then.
4. Cook for 30-40 min (it should be a nice, thick consistency when done).
5. Serve with cold milk, cinnamon and sugar.

Boiled Cod with caulyflower and cabbage:
- 1 cod part per person
- 2 potatoes per person
- 2 garlic teeth on a big enough pan boiling water with a whole peeled onion
- 1 cauliflower per person
- enough cabbage for all.
-Just let it all boil untill the potatoes are ready, serve with olive oil, vinegar and pepper to the person's taste.

potato "gulyas":
1 kg potatos
1 kg Frankfurter (sausages), ham, or any kind of meat
500 gramms of onions
1/2 liter beef soup
2 spoons ketchup
2 spoons paprika pouder (sweet)
1 teaspoon worcester sauce
1 spoon majoram
1 spoon salt
1 teaspoon black pepper
cut onions ,potatos and whatever meat you use into small slices.
frizzle the onions a bit in sunflower oil, then add meat and potatos.
stear arround and add ketchup, then add majoram, worcester sauce, paprika pouder, salt and pepper.
then fill into hot beef soup.
let that cook for 20 minutes. - finished.
best served with beer.

Easy Thai Coconut Chicken Soup.
1 Package of Shrimp flavor Ramen noodle soup
2 cups water
1 teaspoon fresh grated ginger
1 Lemon wheel
¼ tsp dried basil
1 clove garlic minced
½ cup pre cooked chicken, shredded from bone
¼ cup preferred asian vegetables such as water chestnuts, bamboo shoots, mushrooms, baby corn, etc.
⅛ cup premade Piña Colada cocktail mixer, non-acloholic.
1. Add water and lemon wheel to pot and bring to boil.
2. Add dried noodle block, chicken, ginger, garlic, and basil to pot, and boil for 3 minutes. Stirring to break up the noodles as they soften.
3. Test doneness of noodles and remove from heat. Discard lemon wheel.
4. Add vegetables and Piña Colada mixer, and stir.
5. Eat it.
