Just got done cooking a turkey, and breaking it down for soup, sammies, and other yummy treats. Had me a turkey, cranberry and bacon sammie.

I don't think so, I'm not really sure I'm qualified to decide on what is or isn't normal, though :p
I love to cook. I've cooked a lot of different things. I've cooked a goat. I've assisted in "packing meat" which is what my family calls it when you get all the meat out of a freshly slaughtered cow. I feel like I've been splattered with blood from most types of farm animals including ostriches. But I've never cooked a turkey. I never even thought about it until now.

No, this is my first solo turkey at 47.
Fucking thermometers didn't work right, had a probe with an external thermometer that read 137F (target was 161F), but I double-checked it with an instant-read thermometer, which shot up to 177F on the breast and 185F on the drumstick. Fuck fuck fuck. Pulled it out of the oven, not knowing which one to trust, measured a few more times, looks like it was overdone. WTF, 17lb bird, in for less than 3 hours at 350F. Shouldn't have even been done yet.
Yeah, it was a bit overdone, but it's still good. Being a bit over isn't that big of a deal since it's destined for sammies and casserole anyways.

I don't cook for others. Plus, I just have a hybrid microwave/convection oven. Doesn't seem big enough for a turkey. Cornish hen, maybe? But I don't even know how to do one of those.

I always spatchcock my birds to cook it faster and more evenly.
But if I was going to roast a turkey and it had to look whole I would put it on a rotisserie.
Windscreen wiper motor and a 10 gallon drum cut in half with a fire underneath.
Just like a pig on the spit.
I'm getting hungry. :-)
I never trust an internal temp probe.
They usually break cause someone slammed it in the door and they cost a fortune to fix.
On the other hand I have melted one or two hand probes. :-)
