I like making quiches out of leftovers. Whether I have leftover enchiladas, or lasagna, or stir fry, it's quite easy to chop up the leftovers and mix them into a quiche custard (eggs, milk, and cheese). Tonight I went crust-less, and used broccoli, onions, and mushrooms.

I'm pretty sure that tomorrow's brunch is adequately covered also  Wink

Umm...will you adopt me?
