It's just cooking stove-top in a covered fry pan with a little bit of liquid. It tends to make juicy tender meat, and depending on the liquid may get rather more caloric. Adding cream to seafood and cooking this way is great, but tends to add a hair to the waste line.

Known in some circles as "braising", if I'm not mistaken. It's at least a very similar technique.
