BBQ season

BBQ season
Its here. So, the perennial question,

Gas or charcoal?

Personally I think there is only one way to cool. Pile up the charcoal, and pour a half bottle of lighter fluid over it. Or petrol at a pinch. Strike a heroic pose. Light a match. Throw your head back and bellow at the top of your lungs, "I AM THE GOD OF HELLFIRE!!! AND I BRING YOU...." throw the match, extinguish your eyebrows and grin like a loon. It tends to make the neighbors look at you funny, but its so worth it. Try it, you won't be sorry.

For any poor benighted young people who have the misfortune to have been brought up on katy perry and Justin Bieber, you do it like this.

Or you can hunch over and turn a little dial, and press a little button, and have a nice safe controlled little outdoor gas burner. If you think its as goodWink.

I prefer charcoal, but the convenience of gas is tough to beat. I usually cooked with gas for burgers and dogs, but went for the charcoal for almost everything else.

What I really miss is my firebox smoker; combination of charcoal and wood.

Charcoal, never with starter fluid though - use a chimney starter instead.

Indirect grilling / smoking over low heat is the best. Big Grin

Propane. Had cheeseburgers yesterday. yummmmm....

Charcoal can add some good flavor. Lighter fluid can add some bad flavor, if you put the food on too soon. With a gas grill with heat diffusers, the meat drippings smoke and add a nice flavor. So, it's kind of a push on flavor, and gas is much more convenient.
