Wait until you have a cheese that you need to slice very thin in order to withstand the pungency...
Feta is mostly made from sheep's milk... sometimes with some goat's milk in the mix.

Try a 100% goat's milk, well ripened... oh dear...

Not sure I've had that. I like Swiss (which is actually American). Never knew Gruyere was different. 

Also like cheddar and feta, especially on pizza (with mozzarella).
