It is somewhat queer that the zombies and the earthquake escaped notice from others. Jesus' spirit body still had holes in it, so why would these raised dead have perfected bodies? Oh right, it's just another ad hoc rationalization.

Let's not forget we're still talking about some extraordinary event that is extremely unlikely based on what we know about the way nature works (and the ease of human susceptibility to believe and accept all sorts of nonsense). If anything, it's highly (and I mean really highly) likely that this anecdote was put into the text without any verification whatsoever from any potential witnesses.

It's almost like, in an area and region of competing gods, someone wanted to highlight the power of theirs by having them do something impossible in their origin story....

It's the same reason Zombie Jesus is a thing. We know he wasn't described as a literal flesh eating zombie (would be ten times more interesting if he was), we're just making fun of the absurdities. It's really not a hard concept to grasp.

When Jesus was raised from the dead, he was still in relatively good condition, by all accounts. 

It was a much differ situation when Paul (or Saul), the greatest of all apostles, saw the zombie of Jesus wandering aimlessly in the wilderness on the road to Damascus, after being dead for several months. Paul described him in horrible condition, rotting flesh falling off the bone and was terrified.

The Bible describes flesh eating on many occasions.

Mathew 26:26
"While they were eating, Jesus took a loaf of bread and broke off a piece and handed it to the disciples, saying, "Take this and eat it. This is my body."
