I tell people that the only way to know, truly know, what you're getting, is to get it from someplace you can actually visit. From an actual person whose hand you can shake. Go local or go home. The little guys may not have the organic cert (it;s expensive and time consuming) and they may not have the free range designation - if for example they've converted their operations recently and still use the old equipment...but that doesn't mean you won;t get the product you -actually- want.
As to ethically raised meat...ala the slaughterhouse...if you want that...don't leave it up to purdues lawyers to define for you, lol. Those guys get awfully "creative".
