We used evaporators to separate fresh water from sea water in the Navy. Simple process.

True water vapor, as in gaseous state of water, can’t dissolve salt or anything else. This is why salt water can be distilled into fresh water, and sea salt can be extracted by evaporating sea water. When salt water is converted to vapor, Salt comes out of solution and remains behind. The vapor when condensed again comes out as fresh water.

However, not all of the water content of the atmosphere first got there by evaporation. Some are droplets of sea spray. These become airborne while still in their liquid phase and carry their original dissolved salt with them. This is why there are some salt in the water content of the air over the oceans.
