Yea, I often counter that bullshit with the fact that homicide detectives are never there when the murder occurs but find clues after the fact to catch the killer with things like fingerprints and DNA. 

Knowing the age of the planet and universe is done through things like knowing the speed of light, astrophysics, geology, anthropology, fossil records in much the same way.

Pesky things like "clues". 

Really as simple as knowing that when if find cat shit in my cat's litter box, even though I  didn't see him take a shit, pretty sure an elephant didn't leave it there.
