I never got the trophy hunting. I got the biggest 10 point I ever shot last year - and the only picture is one my brother in law took of it in the trailer when I hauled it home. I gave him.the head - and he gave me back a " european mount" he did. (Just the antlers)

They hang in my garage to show the work he did.

My trophy is a full freezer.

Mix olive oil, salt, pepper, red vinegar, soy sauce, dry mustard, garlic and lemon juice is a bowl (how much of each depends on personal preference). Wrap the steak in rashers of bacon, put it in the marinade, and put it in the fridge over night. Grill it or broil it. People who fry steak should be beaten soundly about the head and shoulders with a thick stick.

My favorite. Marinade in a sweet red wine, garlic and onion for at leat 3 hours in refridgerator.

Cook coverered in oven @ 300f for 3 hours - tjen uncover - and turn every 10 minutes until baking pan is nearly dry. (Usually less than an hour)

You end up with blackened meat - that's moist and so tender it will cut with a fork.....

Leave the bacon on during the cooking - venison has almost no fat content. Your steaks shouldn't be on the grill long enough to need basting, but I don't see why you couldn't if you really want to.  I've never used this particular marinade as a dip, but it sounds like a good idea.

How long do these things keep in the freezer?  Meat seems to acquire a dry stale taste in less than 6 month in my freezer.

Seal - a- meal vacuum packaged - I have eaten 3 and 4 year old meat that had no freezer burn or odd taste.

Use a Zip-loc bag and squeeze the air out of it. You can submerge the bag to get that last few air bubbles out.

I have much better luck with Seal a meal.

Any Glad bag will allow air in - regardless of how well you evacuate air. The seal simply isn't air tight. They are good - far better than any wrap - but in.my experience they are good for a few months at best.
