Actually, it's because metals don't (generally) give off particles.  When you smell anything - bacon, coffee, candles, your pits - it's because little bits of whatever-it-is are getting in your nose and giving the olfactory receptors something to do. But you CAN smell metallic compounds, like iron oxide. Why?  Because the compounds are in a state that gives off particles.

I got a good whiff of iron fumes today while cutting up a bunch of tubing for a frame I'm making to mount up the new fence to my table saw. Lots of shiny specks on the driveway that I was sure to sweep up so that they don't get tracked into the house and ground into the wood floors. I'll have to put up some sort of protective baffle so that when I'm arc-welding it all together tomorrow or the next day I don't blind the neighbors. I have enough tube "left" to make a nice table for copper working.  Great

Arc welding tubing?
