She's right though... evolution is just a theory. One supported by a gigantic pool of intersubjectively verified evidence using the scientific method... but a theory nonetheless.
The mistake would have been to say that evolution is just 'the' theory. And then I would laugh at her harder.
Please give me a home where cloud buffalo roam
Where the dear and the strangers can play
Where sometimes is heard a discouraging word
But the skies are not stormy all day
