While I'm partial to Romulan ships in general, I really liked the Sovereign class Enterprise E and the Defiant (as see on DS9). Also, the refit Constitution class Enterprise.

Romulan ships are the most aesthetically pleasing, I'd say. Warbirds just look bad ass. Among Star Fleet vessels, Voyager and Defiant.

I really like the defiant . It's not a big capital ship . It's a sleek scrappy small scale skirmisher. It was also specifically built to kill Borg.

And the idea of it is perfect from a design-goal perspective. Goal: find something that can bitchslap the Borg, design: slap a whole load of guns onto a whole load of engines and strap everything down hard.
Rumours that the ship was originally going to be called
Ben Sisko's Mothafuckin' Pimp Hand are entirely accurate.
