Probably just say Salam back.
Muslims don't tend to say it to non Muslims, at least where I live.

It tells us that we’re ready, we’re at home, we’re where we’re supposed to be. Flames don’t intimidate us. What do we do? We control the flame. We control them. We move the flames where we want to. There is a store that I frequent that’s owned by a man from Yemen. I often greet him with Salaam Alaikum. He always gets a beaming smile and responds in kind. It’s a greeting that I heard from some of my Muslim friends overseas.

I'd probably be caught by surprise and assume I misunderstood something again.

I'd try to respond with "Wa'Alaikum aSalaam" or whatever it is and make an idiot of myself with my horrendous pronunciation.
