Just how stupid were the ancient Israelites?

If there was anything rational about their decision it would not be so condemned.
However, keep in mind, the golden calf started moving due to a sorcerer's magic, and they equated that power with the power displayed by Moses. And Pharaoh's people disbelieved because they equated Moses' miracles as well with their sorcerers, and so the question arises, how to distinguish between a true miracle and not one. And this is why the talk of Jacob and his name "Israel" is important, because, yes, might of power to a degree does verify you being right. But only at a very very high level. It's not distinguishable without reasoning and logic. Per Quran, it was the sorcerers out of the people of Pharaoh who submitted to Moses and Aaron authority, because they realized how beyond it was from natural acquired ability.
There is even more issues arises with higher signs like seeing Angels. Read the 15th Surah of Quran Khemikal. It's not over long. Tell me your thoughts, do you think it is easy to recognize a trustworthy Angel per the paradigm of that Surah? The lowest down to earth way to know God and book and truth through analyzing a text, is in fact, so much easier, then being put in a hot spot to accept if a miracle is a miracle or sorcery. And harder then all that, is, recognizing Angels from deceiving Jinn. And even if a door to ascension was opened and we began ascending, to know you are not bewitched or going crazy is not easy task when we are in a state of injustice and irrational doubt. Read the 15th Surah. At the same time, God shows the signs for those who actually attain certainty and has adorned the sky with blazing lanterns for those who look. It's all symbolism, imho. A story told to convey a certain message. Maybe there was slavery of the Jews in Egypt and a man named Moses who helped lead them to freedom, but if that's the case, the story, as it is told, is exaggerated to make a point.
