Evolution doesn't have an arrow. It always has to make do with what it's got to work with, and the only criteria it has is reproductive success. Rabbits are VERY successful, evolutionarily speaking. That is how badly you misunderstand what the theory actually says.

In fact, some animals evolve characteristics to attract mates despite that those characteristics detract from survival, such as the peacock (video).

Sorry to burst your bubble, but whether earth is at center of the observable universe, and how far is the earth from the center of the observable universe, is a much more complicated and subtle question then you think. The answer depends on a lot more things than invariant speed of light. It depends on exactly how isotopic the expansion, and more importantly the acceleration of expansion, of the universe really is. Just how homogenous the universe was at the start of era of recombination after the Big Bang, did recombination occur exactly simultaneously or did it sweet through the universe like a wave. And is space itself really isotopic. Any deviation from perfect homogeneity and perfect isotropy will displace earth from center of the universe, likely by margins that are huge compare to size of solar system, or even the size of Milky Way. And unfortunately these factors are only not well constrained enough to tell us just how far earth would be displaced from center of observable, and observed, universe.
