I don't understand at all not supporting or encouraging any type of relationship. I can see it could cause problems, but that doesn't mean you segregate.

In that case, I might suggest that you teach the class to disregard what the bible says about segregating themselves from “unbelievers”. To wit:
2 Corinthians 6
14 Do not be yoked together with unbelievers. For what do righteousness and wickedness have in common? Or what fellowship can light have with darkness? 15What harmony is there between Christ and Belial? What does a believer have in common with an unbeliever? 16What agreement is there between the temple of God and idols? For we are the temple of the living God. Alternatively, you might teach them that this passage doesn’t actually mean that Christians should not be yoked together with wicked unbelievers, but it really means that they should love all people from all other beliefs, including atheists, and that they should seek the fellowship of all men. In other words, don’t take it literally.

I commend you for asking this question, Tack. Kudos to you. I'd like you to teach them not to dismiss science or it's ability to explain the natural universe. I like you to teach them that evolution through natural selection is, in fact, "how it happened". I understand that you might also teach them that god is the ultimate cause of it all, but at least they will understand that science does, in fact, discover truth. I am sick to death of living in such a scientifically illiterate world. Champion my cause, Tack! Change the world!

@ Strongbad- I think the version you quoted added "...Belial? What does a believer have in common with an unbeliever?..." That's not in my KJV. It's a simple reference to the Corinthians that had converted from paganism and separation from the old paganism rituals and friends. I'd teach that as a simple don't put yourself in a bad situation and don't assume unbelievers are wicked, simply for their unbelief. Separating yourself from things that are harmful to you is an important survival tool, I'll make sure they feel less threatened by what they don't understand.
@Paul- ty but I don't seek to change the world, merely a few perspectives. We are mostly in line with science in our teachings, but I'll stress all the critical scientific points.

Along the lines of broadening their perspectives, perhaps they should be made aware of subjectivist philosophical positions (Ie: nihilism and existentialism. Of course, this is assuming that are either not aware of such, or that that don't understand the positions in the first place)?
If the class is mostly for young adults, I would think illustrating subjectivity quite informative (from my experience of having introduced myself once to a college class as an existential nihilist, and seeing collective cluelessness regarding such). Failure to understand that their views are not necessarily the views of others is a great part of what makes many religious people difficult to talk to.
