When I was growing up, you could buy half a loaf (unsliced) from the baker. It cost half as much as full loaf.
Locally today, you can still buy half a loaf (still unsliced) from the artisan baker. He boasts that he uses a wood oven. They don't call them half a loaf and they cost about 50% more than a sliced supermarket loaf.
When did most bread convenient to buy become barely suitable for human consumption? First, they removed the wheat germ--------and so it went.

Bloody right.
Can't buy proper pumpernickle where I live. Good heavy rye is available from that same artisan bakery. His white Italian style is terrific. Doesn't do French bread, but baguettes are easy enough to make at home. Have never tried making croissants, too hard. Can't get proper croissants anywhere near here. The supermarket one's simply don't use butter

Absolutely! This year I finally learned how to make flaky pastry. Takes a lot of butter. Not margarine and not fucking oil. I have always wanted to be able to make proper flaky pastry for my pasties. I make killer pasties. They even taste OK using supermarket puff pastry.

I'm sure they're tasty, but pasties should be made with shortcrust - not flaky - pastry.
