Poe is a reference to Poe's Law: "Without a winking smiley or other blatant display of humor, it is impossible to create a parody of Fundamentalism that SOMEONE won't mistake for the real thing." Trolls with a fundamentalist front are often referred to as "poes".
Fer srs is simply short for "for serious" a.k.a. for real, legit, et cetera.
