What sucks due to my religion (for me).

Ah, the constraints religion puts on dating.  Your problem is not new.  People have been forced to look within their own churches (and mosques) for partners.  This, of course, is what religion wants:  believer couples that will raise believer children.   Why not find a girl within your Muslim community?  After all, the odds of convincing this person that Islam is true is pretty slim.

Then, my friend, you're in a spot many others have been in before you.  You either have to give her up, break the rules of your religion and hope the end result isn't as bad as you claim, or break with your religion.  Because it doesn't seem, from your description of her, that this person will convert.  I could be wrong, and you will probably try.  So let us know how it turns out.   

I know it hurts - I have been in a similar situation.  I'm sorry.   If she does not convert, and if you cannot break the rules, then, for your sake, go out and mingle with some Muslim friends - with some single females.  The only help will be to distract yourself.
