You just can't beat Lamb. It's so natural, and also a great environmentally-friendly use of Aussie land. Cattle are also a great use of land, don't get me wrong, but 90% or so of Aussie Beef is cows "finished on" grains, whereas Lamb is pretty much a pure mammalian meat grown from pasture (obviously with the exception of using grain as a necessity in drought affected areas). They're also not domesticated to the point that they have their own species separate to what they started from (in fact this made them easy to domesticate, unlike the aurochs). It's as close to nature as you'll get without going full game-meat.
As you Eat lamb once a week, be sure to have a few cutlets on the 26th (Australia Day) in celebration! With a few cold VB's if possible.
