You're incredibly hungry in the morning because you're not eating in the second half of the day. It's a cycle you've created.
In a way, it's good. You don't need to eat a whole lot before bed, because your body is just going to store most of it when you sleep. Whereas if you eat in the morning and afternoon only, you're going to burn more of it just from regular physical activity.
I would try to stretch it out until 4 or 5 pm at the least, but if it works for you, no need to be concerned really.
