I would agree that you should be honest, you don't want to lie for the rest of your relationship with someone that is a best friend. Most people come around eventually or at least get worn down over the years. For my god mother that took her job too literally I just kept telling her I love her and disagree but eventually I just started changing the subject and now we don't discuss religion at all.
