 God himself says He can not lie and yet He is omnipotent. God's sinless attribute will not allow Him to lie. This is a good thing because we can trust what He says. Why would I want to mislead by wording things to fit a situation you believe is true, such as God not being omnipotent. Representing the truth is what Christians are to do, unlike atheist who's moral standard doesn't always include this, as you made obvious in the above underlined. God being omnipotent means He is capable of everything that is possible for Him to do, sinning is not possible for God, neither is forcing you to believe in Him, that would go against your limited choice, ie free will.

Your definition is incorrect though. Omnipotent means to have unlimited power. If god's power is limited, then he is not omnipotent. You can twist definitions and go through as many mental gymnastics as you want, but you can't change the fact that god cannot be all powerful and limited at the same time. He may be far more powerful than anyone here on earth, but still not all powerful.
