I'd say your first and best option is to inform, and try to get the management to BUY a coffee maker and get people to contributed to buying the coffee, anyone caught with a mug who hasn't paid would be the best way to stop it. I wouldn't spike anything if you were considering that because you don't know anyone's allergies or medical conditions. And again, outside that it can be completely avoided by making your coffee and drinking it BEFORE you go to work, or go out and buy it on your break.
I won’t retaliate in a risky manner, but I will have fun with it, if it continues after the sign I put up. I like having my coffee at work. I shouldn’t have to change that.
You want to drink coffee without having to worry about someone taking yours. I get that. Just don't do anything that would risk their health or your job or get you sued or arrested. Their petty crap is not worth you getting yourself in trouble.
