The 'what if you're wrong?' argument fails on many more levels than what you mention.
Just responding with "well, what if you're wrong?" without explaining why the question itself is completely flawed, does nothing to support the atheist position.
Atheists being wrong would not necessarily result in being sent to hell, nor does it mean that the theist is right by default.
1. Not all deities believed in by theists punish disbelievers.
2. Theists and atheists could both be wrong and end up in the hell of a deity that neither believe in.
3. They feel that we have a choice to believe that their specific 'nonbeliever punishing deity' exists and that we can just start believing it exists just 'to cover our ass'.
4. What is atheists are wrong and the god that does exist is one that rewards those of us that utilized the brain that 'he' gave us to determine that there was insufficient evidence to justify belief that 'he' exists? And the same god punishes theists for being gullible enough to believe in the rantings of superstitious, Bronze Age barbaric, goat herding, tribesmen?
Just to see if the person that uses the 'what if your wrong?' argument completely fails at critical thinking (as if asking that question is not enough evidence already
), ask them to prove that the god I just described does not exist.

You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.
