My favorite has to be cheddar--simple ol' cheddar, although I preffer it to be extra sharp and crumbly. It goes hand and hand with bruschetta and apples. If you haven't tried cheddar with apples before, DO IT NOW.
2nd favorite would be goat cheese. I love the tang and the creaminess. It's excellent on its own or spread on toast with a helping of hot red pepper jelly.
3rd is probably Swiss. It's such a relaxed, nutty flavour that goes perfectly with sliced tomatoes and a dash of balsamic vinegar on a slice of toast.
I love pretty much all cheeses, with an exception of bleu cheese. I love the bite, I really do, but my brain can't seem to get over the dark mold, which is funny because I eat the white moldy rind of Brie just fine.
