Most atheists do not claim to know, with absolute certainty, that a god does not exist. I am not saying that a god does not exist based on the lack of demonstrable evidence that one does. I'm saying I don't believe one exists.
The very fact that the case for the existence of a god has not met its burden of proof is the reason why we don't believe.
A god could exist. But without sufficient evidence to support that claim, what should be our justification to believe one does?
You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.
