In every sport, especially any contact sport, there is an expectation for contact. But in reality even in contact sports, players know while it is contact in the game, nobody wants to get knocked out of the game. Taylor was upset for breaking his leg.
In contact sport players want to "knock someone out" but not "knock them out". Taylor really felt bad about ending Joe's career. Taylor only wanted to tackle him, not end his means of living.
