Christ our immortal savior, the mechanism is God's omniscience and omnipotence. The biology we have is insufficient, the change did come with the disobedience of Adam and Eve. Why would God leave traces of the old, no these bodies will die, Christ will resurrect those who accept who He is and we will enjoy eternity with Him. The evidence is coming, just be patient and you will see it, you will believe at that time if you do not before.
Why wouldn't God leave traces of the old? Biblically, it took a long time for our lifespans to wind down to less than 130 years. That should leave some genetic traces unless Someone wiped them away...that is, changed the evidence to deceive us.
