IDK if it's entirely impossible to prove love. I even think that considering it as such is more than likely a defense mechanism for failing to have the sort of proof we might routinely expect in the case of a parent or so. If I wasn't convinced that my wife loved me, we wouldn't be married. If I wasn't convinced that she loved her children, we wouldn't be parents. My best friends love me, too, and I love them. Similar expectations and long experience apply just as well. If a god, or you, or the mailman fail some conceptual test of love, then the problem is unlikely to be that love is untestable and fundamentally unprovable, and more likely that you or a god or the mailman, don't feel the same way for us that we feel for each other. The claim, in effect, becomes christianese. It may mean something, and whatever that is may be true, but it isn't love.
Or, if we insist, we could posit the same thing we do for people who love, but fail to express or demonstrate that love - and say that they're just fuckups who can't do better. I somehow doubt that any believing person would want to apply these criteria to their gods.
