Prophets are not themselves "THE WAY" or "THE TRUTH". These are people who (supposedly) show "the way" or tell us "the truth". It's the not so subtle distinction between being a messenger and being the message.

Jesus, or the character represented in this story said to be Jesus, is claiming not just to know or to tell us what is the truth. He is claiming that he IS the way, he IS the truth, he IS the life. To claim no one comes to God except through him is to further claim to be not just a prophet but the very intercessor for the divine.
