Atheists share a single non-belief: the non-belief in gods. There aren't any beliefs that must be held in order to be an atheist. The word 'atheist' is an ordinary noun and the negative of 'theist', also a noun -- are you planning to capitalise 'theist', 'deist', and 'pantheist' as well? The Masons are part of an organisation. The names of organisations are capitalised because they're proper nouns. Atheism and theism aren't organisations.
