Religion is also "performed by men." The difference being that scientists can correct faulty work. Most theists believe in a perfect and inerrant god, who cannot get things wrong. Religion is typically designed to resist change, if not outright forbid it. People may retard scientific progress from time to time, but it seems that over the long haul we continue to learn and progress.
Science might take a step back for each step forward, but it seems to me that religion is designed so as not to take any steps at all.
