Two things about the story to note. The prohibition to not eat from the tree of knowledge was given before Eve was made. Second, there was no prohibition against eating from the tree of Life.
The garden is the human mind. The two trees are in the center of our minds. Eve is the human ego, a subset of the whole human, Adam. The snake represents love of the world. If the ego becomes the ruling portion, like when Adam follows Eve, then the love of sensuality rule over understanding instead of spiritual awareness that comes from the tree of life.
