There are a few possible options:
- God is bound by the rules of logic and can't create paradoxes. For obvious reasons a limited God is unpalatable to certain mindsets.
- God can create paradoxes but not in our universe. Not unless God wants to destroy it. The underpinnings of our universe are incompatible with the existence of logical paradox.
- God can create paradoxes and hold them in our universe but your mortal mind would be incapable of perceiving them. Your mind would either block them out in self-defense or shatter under the conflicting inputs.
- God can and already has done all of the above. We call it quantum mechanics.
