Evaporation is both good and bad. It's helpful to replace some of the water in a tank periodically to reduce the buildup of toxins and debris.
I had my apartment inspection earlier this morning. I got "all good" on everything except the kitchen, which was just "OK," but I think that was just a default as the range/stove which she claimed was just "OK" was spotless on the outside, and she didn't even look at the inside. Oh well, it beats the usual repeated marks of "fair" which I usually get because of being too depressed to clean thoroughly in advance of inspections. So, a minor victory, but a victory nonetheless.
