Really? Then why create planets, stars and galaxies that we can't even see? In fact, why create anything outside of our planet and sun? Why would anything else be necessary?

As far as I know we can see quite a few stars and galaxies. But, beyond that God created the physical universe and the laws that make it up. We need these laws and material to exsist. God first created "star stuff" so that he could form our galaxy, planet, and us from that material.

Also, how do you know god even exists let alone being responsible for creating the universe?

God also created the laws of the universe. I wouldn't say I "know" God exsists, but I think he does. I think he exsists because when I look around nature and study science I think it points toward a creator. The universe started in a very low entropy state. That low entropy state had to start somewhere because it is only getting higher.
The Bible was meant to be read in context, as a whole narrative, not in fragments.

Why won't this deity let us see these galaxies and travel to them now? Why is he holding us back? He created these things for people who won't be alive for who knows how long? Makes zero sense to me.

I don't think God is holding us back we just haven't learned enough yet. Also, there are probably other planets out there with life forms on them. Probably even other beings with consciences and souls.

Hmm I can't tell you what God was "thinking" when he created the universe, but I would say in no way does that prove that he didn't create it.

I never said I could "prove" God created it. Only that it seems likely based on the nature of the universe. I think of it like the 4th dimension. We are stuck in a 3d world and can only see the shadow of the 4th dimension (or God). We will probably never be able to see or prove that the 4th dimension exists, but we can still get a glimpse of what God/it is like by studying our 3d world.
