About to bake a pineapple upside down cake for my son, he is home visiting this week from Job Corps.

Gonna get some rub on some ribs and marinate some chicken. None of which we were having tonight.

I would like to see your pineapple upside down cake recipe...I just love those, and only made it once and it turned out really bad.

Mind you, 'winter' in NZ is rather a notional concept.  Right now, it's 58F and sunny at mid morning. Not the sort of winters I grew up with.

I just bake it with yellow cake mix. 1/2 cup of melted butter and brown sugar in the bottom of the pan, add the pineapple and maraschino cherries, if that is your thing, then pour the cake mix over it and bake. Might need to bake a little longer than the directions say. About 25 degrees lower too.

When I make it I replace the water called for with the juice from the can of pineapple...super delicious!

Thanks kitty and I like the idea also of using the pineapple juice. Mmm I think I’ll try making it this weekend.
