People can get brain damage from physical accidents, and have their personalities completely reset. They become completely different people.

You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.

Then why do people believe in the afterlife so confidentally? The VAST majority of the world believes in it in someway.
For example my mom was recently talking to an old man who's wife had just died. He talked about her being in heaven as confidentally as saying she was any place here on earth.

I might start a topic on this. Do Atheist concede the possibility that we can know we have a soul? That our minds or souls are capable of sensing that?
Atheism usually is said to be lack of belief in God. But it seems to me that it denies a few things. For example, it would deny many Theists sense of morality that morality needs to be eternally based on God's own existence to be real and what it is. Or that it's possible we can sense God or sense our own souls existing.

Yes, why do people believe in something for which there is insufficient supporting evidence? Interesting question.
It is a question that requires examination and study on why the mind works that way it does.
Did all those people that used to believe that disease, famine, storms, earthquakes were caused by demons, gods, curses, etc make them correct?

JL let me ask you some questions about the 'soul'
What happens with monozygotic twins. This is when one egg is fertilized but then splits into two in the early stages of development. This results in identical twins. So how would the whole soul thing work here? Do identical twins share a soul. Or do they get a soul each as soon as the egg has split in two?
And how about people with split personalities? The left and right side of the brain are different people respectively. Two people in one body. Do they have one soul? Or do they have a soul each?
