I actually have to have loads of blood tests due to my Crohn's, so I'm used to them. I cope by looking away, as long as I don't see it I'm alright. I can remember what I was like when I had my very first one... it was all I could do to stop myself running away!

The sacrifices in the OT were to cover (atone) sin.
This looked forward to the Redemption Jesus paid for which removed the penalty both for those who trust in His shed blood and for those who trusted Him previously.

God takes seriously our actions, yet provided a way to justify us.

How does killing animals atone for sin?  Why would God want people to do that?  Wouldn't it be better for them to be genuinely sorry and try to do better in the future?

And why would God want Jesus to die?  Why couldn't God just forgive people without having someone (himself?) tortured to death?  Why would God want that?

The blood is the life force according to Jewish tradition, so it is a fascination with life. It's also the reason why it's always been the most banned food in the Bible.
But if we walk in the light, as He is in the light, we have fellowship with one another, and the blood of Jesus, His Son, purifies us from all sin.
