Seeing that you like Gaiman and Pratchett, you'll probably like Sanderson as well. He's the guy that finished "The Wheel of Time" after Jordan died. I'd recommend "Elantris" to start. Great world building, very good characterization and it's a stand alone so you won't feel compelled to "finish the story" if it's not to your liking.

You get a definite thumbs up for Terry Pratchett.  Beyond Good Omens, I've never read Neil Gaiman.
