Taste is always an individual thing. I don't think it loses it's flavor. I think for you it simply is not to your taste. The only way for an individual to eat food, is the way they like it. It is not like humans all share the same tongues.

I use a kitchen scale frequently.
I cup packed brown sugar ? Screw that, I just weigh out 7 ounces.
And for the tater packet that makes too much, set it to grams and divide pouch contents in half. 1/2 batch comes out perfect every time.

It does demonstrably lose a lot of its flavor. All of the juice that contains so much of it is evaporated. Sure, it doesn't taste like nothing, but it doesn't have as much flavor as a rare/med-rare steak. That said, I completely agree with you otherwise. People have to eat food the way they like it. I said as much before.
I have a vegetarian sister who can't stand anything with extra flavor. For instance, goldfish has a line with added flavoring. She can't stand it. She prefers the ones I find bland. Perhaps people who prefer well done steak are the same way. Or it's the texture of a rarer steak that throws them off. For my aunt, she thinks it's still bleeding.

Wrong Way To Measure Wrote:500g 18oz minced beef (keep the juices)
700g 25oz sweet potatoes
300ml tomato passata (that's right, surely!)
1 large onion
5g 0.1oz Rosemary
5g 0.1oz Thyme
4 carrots
150g 5oz peas
2 beef stock cubes
1/2 tube tomato puree
1 tablespoon of Worcester sauce
200g 7oz Cheddar cheese
Salt to taste

Measuring bulk dry ingredients (e.g. flour) by mass yields more consistent results, just sayin'.

The evaporation part I'd agree with, but it most certainly has taste to me well done. I like the crispy flavor of the grill marks and fat. I have never liked runny meat. I can tolerate it if someone gives me leftovers because I love steak sauce or even ranch, with hot sauce and pepper. It doesn't lose flavor to me. Even without sauce, I'd still take a plain steak well done over a runny rare steak any day.
There is no right or wrong way to eat food. Nobody else is going to eat it for you.
